A real Neapolitan.

It’s no secret that Neapolitan pizza has some very strict rules. 

 

We make our pizza just like in Naples; out of a genuine sourdough that keeps on rising and rising for 72 hours, beautiful Italian tomato sauce, fresh mozzarella, basil, olive oil - and we bake it in a traditional wood-fired oven. 

 

At Fresca, the pizza isn’t just pizza. It is part of a whole dining experience that features a crafted wine and alcohol selection, hand-made desserts, and outstanding service.

Fresca is the "One to watch 2024" awarded by the international guide magazine 50Top Pizza and no. 37 of 50 in Asia & Pacific pizzerias.

Take some air.

With a destructive taste and a second-to-none aroma, the Fresca sourdough has accompanied us for the past 11 years. And counting.

 

The type of flour used for the dough is just as important, which is why we opt for 'Caputo 00' wheat flour that makes its way to us from a traditional flour mill in Naples that has been operating since 1924.

We are meticulous about the quality of our produce and go to great lengths so that every ingredient you taste will be the finest and freshest you can come by. Italian tomatoes, fresh mozzarella, and cheeses with a DOP label that shows the specific geographic areas around the world from which they originated from.

 

All this effort so that you could enjoy a classic Margherita, or special pizzas that are all Fresca.

The burning heart.

Weighing 2.5 tons, and covered with hand-crafted mosaic in the colors of the city of Naples, our oven is the beating heart of Fresca - everything happens around and within it.

 

Stefano Ferrara has built for us a custom-made and first-of-its-kind oven in Israel, and it is a real piece of art. It is built using volcanic ash from the Vesuvio volcano located above the city of Naples, and is wood-fired by oak.

 

The pizza is baked at 450 degrees celsius and comes out of the oven after 60 seconds - straight to the table.

In the Kibbutz, between the banana plantations and wheat fields, in a rural and warm atmosphere - is where you will find Fresca.

 

We see service as an integral part of your experience with us. Fresca’s staff has extensive knowledge on each of the menu components and undergoes training regularly to provide you with the highest level of service.

 

It is important to note that the restaurant operates on a walk-in seating basis only. You can contact us during opening hours to check the current occupancy status of the restaurant.
